Foie gras issue not just a question of choice

Cheers to restaurateur Stephen Starr, jeers to chef Georges Perrier, and thanks to The Inquirer for printing the June 2 story, "City's foie gras foes put chefs' feet to fire."

It's not simply a question of free choice, as chef David Ansill insists. He distilled the issue by stating, "If you want to eat it, eat it. If you don't, don't." It's about the public educating themselves about their food sources. With the advent of concerns over mad cow, listeria and salmonella in our food sources, people are questioning where their food comes from and how it is handled.

I think after reading the article, The Inquirer's readers will be more informed and will make compassionate choices, rather than supporting a cruel and violent practice for the sake of a few minutes of culinary comfort.

Philadelphia has taken steps regarding smoking in restaurants, and officials did not state, "If you want to smoke, smoke. If you don't, don't." The city should ban this unhealthy product in restaurants and join the ranks of other states that have, or are at least considering, the ban.
