The Editor: Misinformed Merchants Thanks for listing the restaurants participating in the "Freedom Foie for Five" promotion this week ("A bargain for lovers of foie gras," Sept. 26). It made it easier for me to know which restaurants to avoid. The decision-makers at the participating restaurants seem to be sadly misinformed as to what consumers want. A Zogby poll showed that 85 percent of likely voters in Pennsylvania agree that the sale of foie gras should be banned. Last year, the Chicago City Council approved a measure to end the sale of foie gras, and City Councilman Jack Kelly has introduced a similar measure in Philadelphia. The article mentioned a restaurateur who said he had a difficult time deciding whether the production of foie gras was "humane" or not, that is, whether ramming a metal pipe down a duck's throat and force-feeding it until its liver grew to 12 times its normal size was a practice characterized by kindness, mercy, or compassion. I suggest he ask for a tour of the production facility. Other restaurateurs believe "the protesters' ire is misplaced, as most meat production, including pig and chicken farming, can be considered cruel." I'd like to inform them that the Zogby poll also found that 88 percent of Pennsylvanians believe farm animals should be protected under the state's anti-cruelty laws. I'd like to suggest to these owners that after they come up with a replacement for foie gras, they might as well start thinking about where they're going to purchase factory-farm-free beef, pork and chicken.
